And Now for Something Completely Different — Chili!
We’ve decided to take a quick break from all the legal stuff and share something that might make your taste buds happy. It’s fall (almost). Football is back. And all the cool weather activities are about to ramp up. Nothing goes with any of this better than a big pot of chili.
The Law Badgers Chili
This isn’t some fancy, complicated recipe. It’s straightforward, feeds a crowd, and gets better the next day.
Ingredients: 2 lbs ground beef (or a mix of beef and pork), 1 large onion (diced), 4 cloves garlic (minced), 2 cans diced tomatoes (28 oz each), 2 cans kidney beans (drained and rinsed), 1 can tomato paste, 3 tablespoons chili powder, 1 tablespoon cumin, 1 teaspoon smoked paprika, ½ teaspoon cayenne (more if you like heat), salt and pepper to taste, 1 cup beef broth.
Directions: Brown the ground beef in a large pot. Drain most of the fat. Add onion and garlic — cook until softened. Add everything else. Stir. Bring to a boil, then reduce to a low simmer. Cover and cook for at least an hour — two is better, three is best. Adjust seasoning as needed.
Serve with: Shredded cheddar, sour cream, diced onion, jalapeños, and cornbread.
